Winemaking: Manual harvest followed by strict selection of only healthy fruit. In the cellar, nothing is pumped; everything is done by gravity. Cold maceration for 6-8 days. Only natural yeasts are used. The cap is punched down (pigeage) by hand. Maturation partly in terra cotta jars and mainly in used oak barrels.

Area information: Burgundy (over 28,000 ha) is a highly rural area and is located in the eastern part of France, mainly between the cities of Dijon and Lyon. It is an elongated wine region, strikingly narrow and divided into the subregions Yonne (over 6,000 ha, mainly Chablis), Côte d'Or (7,500 ha: Côte de Nuits and Côte de Beaune), Chalonnais (over 2,000 ha), Mâconnais (6,000 ha), and Beaujolais (18,000 ha). Burgundy is one of the northern wine regions of Europe. The cool climate ensures that the grapes ripen slowly, resulting in high intensity and refinement. The soil types in Burgundy vary quite a bit, and viticulture here is highly fragmented. Therefore, it is very important, when assessing quality, to pay attention to the name of the producer. The white wines in Burgundy are almost always made from the Chardonnay grape, for red it is Pinot Noir. Fixin, a somewhat lesser-known appellation in the Côte de Nuits, is located between Marsannay and Gevrey-Chambertin, in the north of the Côte de Nuits. Fixin has been known since Roman times, under the names Fiscinum and Fiscinus. The Dukes of Burgundy had a residence here. Mainly red wine is produced here, from a total of just under 100 hectares. The soil contains a lot of limestone.

Producer information: Domaine Michel Magnien is a family business with a total of 18 hectares of vineyards. Michel Magnien is the fourth generation and the first to release wines under his own label. Previously, the wines were sold to the cooperative. Son Frédéric is the current manager of the estate. Michel owns plots spread over 23 appellations, including Premier Cru and even Grand Cru level in all major villages such as Morey-Saint-Denis, Gevrey-Chambertin, and Chambolle-Musigny. Purity, elegance, and respect for nature are highly valued. The estate has been working organically for many years, and as of the 2015 harvest, the wines are Demeter certified. Since 2015, Frédéric has partially used handmade 160 l terracotta amphorae for some of the wines during fermentation and maturation. In combination with the traditional maturation in wood, this, according to him, provides the best expression of the terroir. By using these terracotta amphorae, he no longer needs to use sulfur during vinification. Only just before bottling is a small amount of sulfite added to the wines.

To be served with: Tender beef, veal, lamb, white poultry and game birds, duck, venison, dishes with truffle/mushrooms, vegetarian vegetable dishes, and mild to medium-spicy cheeses.

Other information: In the Côte d’Or, the very best vineyards carry the honorary title Grand Cru, of which there are only 32. These are followed by around 640 vineyards classified as Premier Cru. The Côte de Nuits is the main supplier of the very best red wines, while for the very best white wines, you need to be in the Côte de Beaune.
