Winemaking: This organic wine with Demeter certification is cultivated in the Robola area and comes from the local grape variety Robola Kefallinia (BOB certified). This 30-year-old vineyard is located at an altitude of 650-700 meters, the soil consists of fragmented limestone and the special general soil-climatic conditions of the nearby Mount Ainos. The name of this wine comes from the English commissioner Napier, who first called the wine Vino di Sasso, which means Wine of the Stone. From this noble variety, white, aromatic wines with high acidity and subtle mineral aromas are made. The aromatic characteristics change over time. Initially, they give the sensation of fresh fruit such as lemon and other citrus fruits, as well as flowers. During maturation, after about the third year, a petroleum aroma shines lightly through due to the limestone terroir. In addition to its characteristic acidity, the wine also develops a long finish with its aging potential of seven years. This wine is produced in a limited number of bottles.
Producer information: The Sclavos family was originally a family of shipowners who emigrated to Russia in 1700. In 1919, after the 1917 revolution in Russia, they returned to Kefalonia where they planted the first vines on the private estate (50 hectares) in the Kechrion area. In 1990, the old vineyard was reorganized and they cultivated the Mavrodafni Kefallinias and Vostilidi varieties using a biodynamic-homodynamical method. Their goal is to make natural organic wines with all the special characteristics of the local varieties. Grapes are carefully selected and unsuitable grapes are removed. Vinification is done with modern means. Fermentation occurs spontaneously and all wines are bottled unfiltered without additional processes, while the addition of sulfites is minimal and only when necessary. The goal is to grow all grapes through a biodynamic cultivation method in the next five years.
To serve with: Excellent with fish dishes, grilled fish or meat with lemon sauce
