Restaurant 212 - Wine with the Oxtail
Deep dark red in color. On the nose, fine red, ripe fruit, beautiful notes of French oak, some plum, a hint of pepper, and lots of cherry. Concentrated yet elegant Malbec with great finesse and aromas of ripe red fruit, a touch of licorice and cedar with some vanilla. Good balance between fruit, alcohol, tannins, and acidity.

The grapes are hand-picked in 20 kg crates. The grapes come from the Alto Valle de Río Negro region, east and not far from the city of Neuquén. Grapes are sourced from the 50-hectare Allen vineyard near the town of General Roca. The vineyard is farmed organically. The vines for this wine are on average 25 years old. The grapes are carefully selected for quality on a 'table de tri.' Before fermentation, the grapes undergo a cold soak for 5 days. Fermentation takes place at 26°C in concrete tanks with remontage for 30 days. After malolactic fermentation, 60% of the wine is aged for 12 months in French oak barrels, the remaining wine stays in concrete. The yield is 45 hl/ha. Clarification is done with natural egg white. Can be stored up to 6 years after harvest.

Hervé and Diane Joyaux Fabre, who grew up in the wine trade, left Bordeaux in 1992 and settled in Mendoza. Old vineyards were purchased and a new winery was built. Their eye fell on the Vistalba zone in the Luján de Cuyo region, southwest of the city of Mendoza. They particularly preferred old Malbec vines; their first purchase was a vineyard with vines planted in 1908. The vineyards are situated at 1,050-1,150 meters altitude and the first 15 hectares were quickly expanded to 93 hectares, including a vineyard in Las Compuertas, a sub-zone of Luján de Cuyo. They also bought 10 hectares of Chardonnay in Tupungato, 40 km south in the Uco Valley. With a sense for French tradition, Fabre Montmayou has in recent years become one of the leading producers in Argentina. The family also owns 50 hectares of vineyards in Patagonia. The vineyards are planted with a high density of up to 8,000 vines/ha; in Patagonia, 4,500 vines/ha. Due to the high altitude in Mendoza and the location and climatic conditions at 245 m in Patagonia, the vineyards are practically disease-free. The harvest is done manually in 20 kg crates and selection upon arrival is standard procedure. No industrial yeasts are used here and aging takes place exclusively in French oak.

Area information: Over 70% of Argentina's vineyards are located in Mendoza, a province in central Argentina at the foot of the Andes mountains. A small portion of Argentina's production (over 3,300 ha) takes place in southern Patagonia. In the province of Río Negro, not far from the city of Neuquén, the Fabre family owns a beautiful vineyard with vines aged between 25 and 45 years. This part of Argentina is lower in altitude, cooler due to its more southern location (Antarctic influence), has fairly strong winds, and produces wines with a distinctively refreshing crispness. Traditionally, a lot of fruit is grown in this area. The region is also known for its very pleasant pinot noir wines. There are not many wineries here and most of them have a non-Argentinian connection, as is the case with Fabre Montmayou.
Serving suggestion: (Grilled) red meat, matured cheeses.
