Character Slightly yellow-gold in color. Generous aroma, featuring peach, pear. Soft, ripe taste, mouth-filling, alongside pear also some toasted bread. Pleasant fris and pure, rich and full-bodied, with a beautiful mousse.
Wine making
Champagne is initially made in the same way as any other wine. The special process, called méthode champenoise here and méthode traditionelle elsewhere in France, only starts afterwards. The process involves the young wine undergoing a second fermentation in the bottle. The wine is bottled with the addition of the liqueur de tirage, a mixture of yeast and sugar. This starts a slow fermentation. The carbon dioxide that forms now remains trapped in the bottle. The longer the maturation on these yeast cells, the finer the bubbles and the better the quality. Before final closure, the wine receives its 'dosage', in this case resulting in a residual sugar of 35 grams/liter.
Area information
The Champagne region is located roughly south of the city of Reims. The soil is highly calcareous. The area covers 33,821 hectares of vineyard, divided into 5 areas, namely the Montagne de Reims, known for the good quality pinot noir, the Côte des Blancs with mainly chardonnay, the Vallée de la Marne with chardonnay, pinot noir and pinot meunier. Slightly further south are the small areas Côte des Bar in the Aube (6,600 ha), known for its full-bodied pinot noir, and Côtes de Sézanne. The most planted grape varieties are chardonnay, pinot noir and pinot meunier. In addition, arbanne, petit meslier (mainly in the Aube) and pinot blanc, pinot gris have traditionally been authorized. By far most Champagnes are sold by the large trading houses, which mainly buy the grapes/wine from the 19,000 winegrowers. However, more and more small winegrowers are now making their own champagne from their grapes, at Delot for over 60 years already. An increasing number of these growers, currently about 2,000, are bringing their own champagne to the market. The quality is often excellent; these are individual champagnes with a lot of character and clearly distinguishable from the mass Champagnes of the big houses. The vineyards of Delot are located in the so-called 'Côtes de Bar', a part of the Champagne region, situated more than 100 km south of Reims. This district comprises almost 1/5 of the entire Champagne area. The temperatures here are just a bit higher, which is why the pinot noir grape is mainly planted here.

Maurice Delot sold his grapes to traders from 1933, but in 1947 he made his first 'own' champagne. He was succeeded by his son Vincent. Since there is no succession in the family, Vincent Delot entered into a partnership in 2006 with Paul Dangin, also a family business with 52 ha, also in Celles sur Ource. They now manage the vineyard and oversee the fermentation. However, aging still takes place in the Delot cellars. Champagne Delot is made exclusively from grapes from its own 8-hectare vineyard and retains its own fresh, pure character. The second fermentation in the bottle lasts 30 months, while the legal minimum is 12 months ‘sur lattes’ and 3 months in the bottle after disgorgement (so a total of 15 months). After the 30 months of bottle fermentation, the champagne rests for another 3 months in the cellar. For vintage Champagne, a minimum aging of 36 months is legally required. Since 2018, Delot has been Terra Vitis certified. Unlike the large Champagne houses, Delot's production is very limited, with an annual average of 70,000 bottles. In short: a beautiful Champagne, straight from the farmer.
Serving suggestions: As an aperitif, with shellfish, cured hams, salads with a sweet component, asparagus, or as a companion to a light fruit-based dessert, mild creamy cheeses.
