Noor - Wine with the Cod
Enticing intense aroma with ripe notes of yellow fruit, toast, vanilla and refined wood. The initial taste is wonderfully ripe and round, followed by plenty of healthy fruit, richness and lively acidity. The wine is pure, slightly mineral and has a pleasant, refined power. In the finish, aromas of toasted wood, vanilla and nuts linger for a long time.

Winemaking: The grapes are harvested by hand, after pressing the juice settles for 24 hours in a tank at 15ºC. Then fermentation takes place in wooden barrels, with the lees being stirred through the young wine every 2 weeks. This is called bâtonnage, which makes the taste of the wine rounder and fuller. Depending on the harvest year, 40% of the barrels are renewed. The young wine matures for a maximum of 1 year in barrels, and in August the wine is bottled.
Producer information: The Morey family has been active in Chassagne since 1643. Bernard Morey, who has been on our list since 1985, divided his vineyards in 2006 between his sons Vincent and Thomas. Thomas, the 10th generation Morey, and his wife Sylvie, who also comes from a winemaking family and inherited 1 hectare, now own 9 hectares together in the villages of Chassagne, Maranges, Santenay, Saint Aubin, Puligny and Beaune. Of these, 4 are planted with pinot noir grapes and 5 with chardonnay. Thomas and Sylvie make their wines in a centuries-old building with vaulted cellars in the village center. Here, Thomas's grandfather Albert Morey used to make his wines. Thomas makes characterful wines, with an emphasis on elegance, freshness, drinkability and finesse.
Region information: Burgundy is a highly rural area and is located in the eastern part of France, mainly between the cities of Dijon and Lyon. It is an elongated wine region, remarkably narrow, and divided into the areas of Yonne (Chablis), Côte d'Or (Côte de Nuits and Côte de Beaune), Chalonnais, Mâconnais and Beaujolais. Burgundy is among the northern wine regions of Europe. The cool climate ensures that the grapes ripen slowly, resulting in high intensity and refinement. The soil types in Burgundy vary considerably, and viticulture here is highly fragmented. That is why it is very important to pay attention to the name of the producer. The white wines in Burgundy are almost always made from the chardonnay grape, for red it is pinot noir.
Serve with: Rich fish dishes with various preparation options (also smoked), shellfish with Mediterranean or Asian flavors, white meat, poultry, sweetbreads, vegetable/mushroom dishes, mild to creamy spicy cheeses such as Mont d’or, Munster.
