A very unique coffee from Costa Rica that brings a deliciously warming feeling and is perfect as a comforting drink at the end of a meal. A dessert in itself! This coffee is processed by Louis Campos, owner of the Cordillera de Fuego Wet Mill, a coffee processing station that processes coffee from cherry to bean for the surrounding farmers and prepares it for export. For this specific coffee, Louis uses a unique method in which pulped coffee cherries are combined with a pulp 'gel' from other coffee cherries to give the fermentation a kickstart. These are fermented in an anaerobic environment, which brings out the fruity flavor of the coffee cherry more in the bean. The result is a spicy coffee reminiscent of speculaas and cinnamon cookies. We roast this coffee with a focus on the spicy, sweet-fresh flavors, making it slightly lighter but still intended for espresso. Very tasty black, surprisingly good with oat milk.
