Character:

Pale to light yellow in color, with a slight greenish hue. The aroma has some lime, lemongrass, and a floral scent. Notes of peach, ripe pear, and a hint of apricot. The taste is creamy on the palate, supported by fresh acidity, pure and refined, slightly floral with a pleasant nutty bitterness and a light salty touch in the finish. A modern-styled wine, tastes surprisingly different and is widely applicable.

Winemaking:
The grapes for this white wine come from Finca Calvestra at 900 m altitude and are harvested by hand in 15 kg crates. After the sorting table, each variety is vinified separately. Maceration in the press for the merseguera lasts 4 hours and for the viognier even 8 hours. During fermentation in stainless steel, battonage is applied a maximum of 1 or 2 times in the tank. At the end of the alcoholic fermentation, the wine is transferred to another tank to separate it from the lees. After blending, the wine is stabilized and bottled.

Bodega y Viñedos Mustiguillo was founded in 1999 when owner Toni Sarrión decided to make high-quality bobal wines. The family business consists of a spacious 126 ha estate, El Terrerazo, of which 87 ha are planted with vines. It is located not far from the village of Utiel, in the region near Valencia. The winery is situated at 800 to 900 m altitude and 100 km from the coast. The vineyards have been organically certified since 2009, with an average yield of 30 hl/ha or less. The company enriches the soil exclusively with organic manure and, of course, does not use chemical pesticides. The old bobal vineyards are pruned 'en vaso' (bush-trained), while the other varieties are 'trained' or pruned in 'lyre' style. Irrigation is only used for the international varieties. Since 2010, the wines of Mustiguillo have been recognized as DO Pago El Terrerazo. Bodega Mustiguillo is a member of the prestigious Grandes Pagos de España (www.grandespagos.com).

Area information:

The area that Bodegas y Viñedos Mustiguillo technically falls under is the D.O.P. Utiel-Requena, east of La Mancha and 70 km west of Valencia. Toni Sarrión has never sought to be associated with this region, and since 1999 the wines have first been marketed as Vino de Mesa, in 2003 as Vino de la Tierra El Terrerazo, and since 2010 as DO Pago. Utiel-Requena has had a D.O. since 1970, which was recently changed to the EU designation D.O.P. The towns of Utiel and Requena give their name to the area, which covers 37,000 ha. The area is located against the Spanish plateau at an altitude of 600 to 900 meters. It is clearly cooler here than in the rest of the Castilla-La Mancha region. The climate is Mediterranean with continental influences: dry and warm. At night it cools down considerably due to the fresh wind and mist from the Mediterranean Sea. There is about 400 mm of precipitation per year and plenty of sunshine for optimal ripening. The soil consists of sand, (limestone) stones, and clay.

Serve with:

As a refreshing aperitif, with fish such as sardines, boquerones, squid, sushi, light meat dishes such as vitello tonnato, vegetable dishes, salads, Asian/Arabian flavors.

Serving temperature: 10 to 12 C

This Mestizaje has been made since 2006. The grapes for Mestizaje wines are all organically grown and certified since 2009. Merseguera is a local variety that often produces simple wines with a low alcohol content in the Valencia region. Toni Sarrión, on the other hand, makes a low-yield, phenolically ripe merseguera, which is genetically close to the Spanish torrontés from Galicia.
