Clear color, light yellow. Pleasant ripe fruit on the nose with notes of pear. But also brioche and almond. Soft and smooth on the palate, rich and very pure, alongside a tingling freshness also some ripe notes of the aforementioned brioche. Elegant mousse, pleasantly dry with a long finish.

Wine production
The Chardonnay grapes mainly come from Premier Cru and Grand Cru vineyards from the Côte des Blancs, the 2 black grape varieties from Verzenay, Ay, Mareuil-sur-Ay, and Ambonnay. After the first fermentation in stainless steel tanks and the malolactic fermentation, 40% reserve wine from older vintages is added. Then the wine is bottled with the addition of the ‘liqueur de tirage’, a combination of yeast cells, wine, and sugar. The second fermentation in the bottle and aging ‘sur lattes’ lasts 36 months. This creates the fine mousse, and the formed sediment is removed via a special procedure. Before the final sealing of the bottle, the ‘dosage’ is added; this Brut contains 6 grams of sugar per liter. The minimum aging of the wine in the cellars is then another 6 months.

The Champagne region is generally located south of the city of Reims. The soil is very chalky. The area covers 33,821 hectares of vineyard, divided into 5 areas, namely the Montagne de Reims, known for the good quality Pinot Noir, the Côte des Blancs mainly with Chardonnay, the Vallée de la Marne with Chardonnay, Pinot Noir, and Pinot Meunier. Slightly further south are the small areas Côtes de Sézanne and Côte des Bar in the Aube, known for its full-bodied Pinot Noir. The most planted grape varieties are Chardonnay, Pinot Noir, and Pinot Meunier. In addition, arbanne, petit meslier (mainly in the Aube), and pinot blanc, pinot gris are traditionally authorized. By far the majority of Champagnes are sold by the large trading houses, which mainly buy the grapes/wine from the 19,000 winegrowers. Among these trading houses are about twenty Grands Maisons, houses often with a long history, distinctive house style, and reputation.

The history of 'Champagne Barons de Rothschild', one of the most prestigious wine families ever, dates back to 2005. They already own worldwide wine estates with an enormous reputation, just think of the Premier Grand Cru Classé wines of Château Lafite-Rothschild and Château Mouton-Rothschild in Pauillac and the family branch with, among others, Château Clarke. With Champagne Barons de Rothschild, they now offer a 'Prestige' Champagne that can compete with the very best Champagnes. The base grape chosen is Chardonnay, giving reasons to settle in the area where this grape delivers the best qualities, namely the Côte des Blancs. For production, a partnership was established with a small, high-quality producer 'Goutte d'Or' in Vertus. In a newly built facility in 2010, vinification for Barons de Rothschild takes place. In 2007, the Champagne house Prieur in Vertus was acquired, and in these cellars, the champagnes of Barons de Rothschild mature. The grapes currently come from over 70 ha of vineyard, 4.5 ha owned (including the 1 ha Clos Prieur) and the rest under contract. The vineyards are located in, among others, the 1er Cru and Grand Cru villages of Avize, Cramant, Mesnil-sur-Oger, Vertus, and Oger. Production amounts to a maximum of 500,000 bottles per year. Rightly so, a small Grand Maison. The headquarters of Barons de Rothschild is in Reims.
Serving suggestions: Fantastic as an aperitif, with fish dishes, shellfish/crustaceans, also white meat and light cheeses such as brie.

The name Concordia (unity) comes from the Rothschild family slogan ‘Concordia Integritas Industria’.

Please note: on Sunday, April 20, we will charge an increased delivery fee of €19.80 due to the national holiday. You can also choose to have your meal delivered on Saturday, April 19 for €6.90 and eat it on Sunday evening.
A small number of exclusive restaurants use a private "priority delivery service". This service costs €29.
