Acquerello risotto 250 grams
This Carnaroli is dried for a year, allowing it to absorb even more moisture. Yet it remains a firm, not creamy risotto, even when cooled. During preparation, this rice loses little starch and absorbs a lot of moisture, so the grains don't stick together, but 'ballano in bocca', they dance in the mouth. Due to its high absorption capacity, the grains increase enormously in size. All the flavor is absorbed into the grain instead of outside it. It does require some skill to work with this rice, but for those who dare..... -

Ortiz anchovies 47 grams
This anchovy comes from the Cantabrian Sea. This area is considered the best region for this fish. Anchovies are caught in the months of April, May, and June (purse seine nets method). As soon as they are caught, the largest anchovies are beheaded and packed in tins with the right amount of salt. In these 30l tins, the anchovies are arranged in a fan shape, and each layer is covered with a layer of salt. Then the whole is pressed firmly to remove the fat so the fish can mature. The anchovies are then aged for 8 months in maturation cellars where temperature and humidity are well controlled. Finally, the fish are cleaned by hand, filleted, and packed in oil. -

Organic black Tellicherry pepper
Characterized by fresh citrus aromas of lemon and grapefruit, it enriches everything: from a simple grilled steak to sea bass, sweetbreads, free-range poultry, goat cheese, or beautiful ripe strawberries. Its character is sharp, woody, and lemony. Tellicherry pepper has a lingering warmth that breathes a soft and moist scent of tropical forest, with fresh and pure elements. You could even call this pepper 'very elegant', and once you've tasted it, you won't want anything else. Golden combinations? Red meat, spinach, and Tellicherry pepper. Freshly grilled sardines, fennel, and Tellicherry pepper, and for dessert, chocolate cake, raspberry coulis, and Tellicherry pepper. -

Fleur de Sel 200 grams
This aromatic sea salt is scooped from the upper, slightly foamy salt layer, which forms by a play of sun and wind on the salt beds. This salt is only added at the very end, after the product has already been salted with 'regular' salt. Fleur de sel contains a lot of magnesium and calcium, which tend to release other sodium (salt) particles bound to other food molecules, making the salt flavor fuller. Furthermore, they prevent important aroma molecules from getting trapped in thickeners, allowing us to smell the dish better. -
