Winemaking: The grapes are hand-picked. Part of them undergo a short skin maceration (macération pelliculaire), the rest are pressed directly. Fermentation takes place in stainless steel tanks at low temperature. Aging on the lees/sediment for 3 months.

 

Region information: The Côtes de Provence area (27,000 ha) received official Appellation Contrôlée status in 1977. The best wines come from terraced vineyards, as opposed to the vineyards on the plains, which were previously often used to produce cheap bulk wines. In addition to high-quality wines from small areas such as Bandol, Palette, Bellet, and Cassis, there are also promising white and red wines from large areas such as the Coteaux Varois, Côtes du Lubéron, and the Coteaux d’Aix-en-Provence. But the region’s reputation is mainly due to the Côtes de Provence, the area between Toulon and Nice, where the popular, mostly salmon-colored rosé wines come from. 80% of the wines are this popular rosé.

 

Producer information: The Domaine de Curebéasse covers a total of 60 hectares, of which 26 hectares are planted with vineyards. The estate is located near Fréjus, 5 km from the Mediterranean Sea, between Nice and St. Tropez. The vineyards are surrounded by a pine forest and the soil consists of volcanic rock and sandstone. The estate was already mentioned in the 17th century and has been in the family since 1952. In 2003, Jérôme Paquette took over the management of the company from his father Jean. Jérôme completed his studies at the renowned 'Institut d’Oenologie' in Bordeaux, one of the best schools in the field of wine and viticulture. In the vineyard, organic methods are used, with animal manure and vegetable compost. There are 5,000 vines per hectare, and the yield averages 40hl/ha. They produce 130,000 bottles annually, mainly rosé (70%), as well as some red and white. In 2012, the company name was changed to Château Paquette. For several years, daughter and oenologist Claire has also been working in the company.

 

Serving suggestion: Perfect with Bouillabaisse, hearty fish dishes, lobster, langoustines. Roasted, grilled poultry and white meat in combination with Mediterranean flavors, pastas, cured hams, and sausages.
