Valencia Gaspi Macabeo Tierra Blanca & Roja

Producer: Shukhrat Khakimov & Viticultores
Type of wine: Full-bodied white wine
Grape variety(ies): Macabeo
Biodynamic
Closure: Cork
Country: Spain
Wine region: Valencia

Wine production: The grapes for this white wine come from two biodynamically managed plots named Tierra Blanca and Roja (hence the word 'parcelas' on the label) in the Valencia region. The vineyard is not irrigated and the grapes are handpicked in 15 kg crates. After the sorting table, the grapes are destemmed and gently crushed, followed by a cold maceration of 6-8 hours at 6ºC. After fermentation at 10-17ºC with native yeast on stainless steel and oak staves, the wine ages for another 4 months on its lees. No malo to preserve the freshness. Afterwards, the wine is very lightly filtered and bottled.

Area information: The Valencia area is located more than 300 km south of Barcelona and comprises 13,000 ha of vineyard. Subzones are Alto Turia (to the west-northwest of Valencia), Valentino (largest area northeast of Valencia), Moscatel de Valencia (directly to the west-southwest of Valencia), and Clariano (south of Valencia). The climate is Mediterranean with some continental influences inland: dry and warm. At night, it cools down considerably due to the fresh wind and mist from the Mediterranean Sea. There is about 450 mm of rainfall per year and enough sun for optimal ripening. The soil consists of brown stones, (lime)stones, some sand, and clay. Permitted white grape varieties include mersequera, tardana, macabeo (viura), chardonnay, verdejo, sauvignon blanc, and for red bobal, tempranillo, garnacha, cabernet sauvignon, merlot, syrah, and garnacha tintorera. Traditionally, a lot of moscatel is grown closer to the coast (subzone Moscatel de Valencia). In addition, macabeo and merseguera are traditionally widely planted for whites in the other zones.

Producer information: Shukhrat Khakimov is an unconventional producer who likes to think 'out of the box.' Originally a Uyghur from Kazakhstan, he works with grape growers, 'rents' plots, and besides these special wines also has a 'bulk' business with Spanish partners. The wines he makes are either from local varieties, or naturally without added sulfite, or made with minimal intervention, or 'garage wine' in very limited editions, or biodynamic, or a combination of one or more of the above. Shukhrat makes unconventional wines in various regions such as Castilla y León, Castilla La Mancha, Catalunya, País Vasco, Galicia, Navarra, Rioja, and Valencia, etc. Gaspi wines are very limited in production and have a low sulfite content. The vineyards (in the subregion Clariano) for the grapes are biodynamically cultivated and the vinification is with minimal intervention. The result is a beautiful 'garage wine' with a very stylish presentation.

Serve with: Serve with fish, shellfish and crustaceans (not smoked), light meat dishes, cured meats such as Serrano ham, vegetable dishes and combinations with nutty flavors, dishes with mushrooms, mild white mold cheeses.

Serving temperature: 10 to 12ºC

Additional information: Gaspi is a word from Persia that means ‘guardian/treasurer’.

Allergen: sulfites
