Since 2015, Frédéric has partially used handmade 160 l terracotta amphorae for some of the wines during fermentation and maturation. In combination with the traditional maturation in wood, this, according to him, provides the best expression of the terroir. By using these terracotta amphorae, he no longer needs to use sulfur during vinification.
