The grapes are harvested both by hand and mechanically at optimal ripeness. Fermentation takes place at 18ºC, 80% in stainless steel tanks and 20% in wooden barrels (pieces of 228 l) of an average of two years old. This is followed by malolactic fermentation and after racking, the wine is aged for 10 months in stainless steel. Then the wine is circulated for 1 week at minus 5ºC to prevent the later formation of tartrate crystals in the bottle. It is a long, narrow wine region, divided into the subregions Yonne (over 6,000 ha, mainly Chablis), Côte d’Or (7,500 ha: Côte de Nuits and Côte de Beaune), Chalonnais (over 2,000 ha), Mâconnais (6,000 ha) and Beaujolais (18,000 ha). Burgundy is among the northern wine regions of Europe. The cool climate means that grapes ripen slowly, resulting in high intensity and refinement. The soil types in Burgundy vary greatly, and viticulture here is highly fragmented. Therefore, when assessing quality, it is very important to pay attention to the name of the producer. The white wines in Burgundy are almost always made from the Chardonnay grape, while the reds are from Pinot Noir. Chablis (5,140 ha) lies between Paris and Beaune, near the city of Auxerre. As elsewhere in Burgundy, Chardonnay is the basis for all quality white wines in Chablis. Still, a Chablis is clearly distinguishable from other white Burgundies. The reason is the Kimmeridge soil, which in Chablis gives a distinctly dry and mineral character with an extremely refined structure. The use of oak for fermentation and aging is also much less common in Chablis than elsewhere in Burgundy. The renowned estate of Lyne Marchive (her own family name is the famous Tremblay family) has been producing refined, high-class wines from the Chardonnay grape here since 1973. In total, she owns 29 hectares, the majority of which are for Petit Chablis and Chablis, 7.6 hectares for 5 Premier Cru vineyards (Vau de Vey, Fourchaume, Côte de Léchet, Mont de Milieu, and Montmains), and 1.3 hectares of Grand Cru vineyard (77 ares in the Vaudésir vineyard and 53 ares in Les Clos). In total, this modern estate produces nearly 200,000 bottles per year. The cellars are extremely modern, with a new section put into use in 2014. 90% of the production is exported. Since 2018, son Richard and daughter Amandine have taken over from Lyne, while the estate’s oenologist Guénolé Breteaudeau still makes the wines with the utmost precision.
